Bring fresh water to a boil. Slowly pour over a bag of Cardamom Pu•erh. As exotic aromas warm and enchant you, steep 4-5 minutes. For iced tea, steep 2 tea bags, cool and pour over ice.
While interviewing workers during our recent visit to Yunnan, we were pleased to learn that the workers who pick Pu•erh leaves can earn significantly more than the industry norm.
Cardamom Pu•erh Jelly
Preparation Time: 2 1/2 hours.
Makes 3-4 half pint jars of jelly.
- 2 1/2 cups pectin stock
- 3 lb Granny Smith apples, cut into 1/8ths
- 6 cups water
- 8 Cardamom Pu•erh Teabags
- 1 1/2 cups boiling water
- 1/6 cup strained fresh lemon juice
- 2 1/4 cups sugar
Bring apples and water to a boil,stirring occasion-ally until apples are broken down and peels are separated from the pulp (approx 30 minutes).
Strain apples and juice through a cheesecloth-lined sieve into a large bowl. Bring apple juice to a boil and cook until the juice is reduced to about 2 cups. Pectin stock can be stored in the refrigerator for up to 2 weeks. Steep tea in boiling water for 5 minutes. Pour into pot and stir in 2 1/2 cups pectin stock, lemon juice and sugar. Bring to a boil until the mixture reads 220 degrees on a candy thermometer. Ladle hot jelly into sterilized preserving jars, leaving 1/4 inch headspace in the jars. Bring to a boil in hot water and boil for 5 minutes. Remove and let sit on counter for 12 hours. In Good Health!
